The thing I love the most about this foraging business is that I never have to worry about "running out of greens." I can just pop out the back and pick something and eat it 10 mins later. This is common weed, Mallow (Malva neglecta) can often be seen growing in urban areas and nature strips and is great in salads.
This mallow went into a salad with activated quinoa (soak quino overnight before cooking to make digestion easier and to better activate its nutrients), blue cheese, various lacto-fermented veg (beets, sauerkraut, cucumbers), xv olive oil, S&P.
Served with oven baked pumpkin, 'shrooms and crazy good pastured lamb chops, which are my all time fave cut of meat, along with pork belly, because they embody a perfect combo of juicy and crispy thanks to the fat running through them. Crisped up some basil and thyme springs on the chops. Secret to great tasting lamb is adequate amounts of unrefined salt, garlic, herbs and a squeeze of lemon.
